    What process do you use? I can't keep fresh sliced mushrooms around for salads before they go bad. I stock canned mushrooms for nearly every other use.

    For smaller batches, i use an American Harvester dehydrator. with a big bunch I lay them out on window screens and put the screens up on the rafters of my greenhouse. Just pull them apart so they are all uniform in size so they all dry at about the same time. In the dehydrator it takes about 6 hours at 135 degrees. In the greenhouse there can be a lot of variables. Usually when the high for the day is 70 - 80 degrees it takes 2 days. Nothing else. No brine - no nothing. I then put them in a jar with a lid. Make sure they are all dry before you load the jar and they will last for years.
