Really sorry to hear that.. Life. I like my squirrel "confit". Skin it and clean it and cut it up into pieces. Then heat up duck grease if you got some to 85°C otherwise a mild vegetable oil will do. Insert the squirrell and let it be until the meat starts falling off the bone. Then you take the bones out and you can jar it with the grease for extended time or just mix with chopped fresh garlic, a diced tomato from the greenhouse, a few turns on the peppermill, pinch of salt and some freshly grounded parmesan on steaming pasta of your liking.
