Reishi and turkeytail are the two mushrooms I was trained to harvest. I have been eyeballing the one that looks like a pattypan squash. Those get big in the old hogpen. I forget the name. The woods and fields are full of foraging. Choke cherries, nettles, pecan, hackberries, poke weed, and a ton of others are abundant. When I got into prepping, I figured I would run out of everything eventually and added training to what the old folks taught the too-serious helpful kid down the road. A full 20% of my kids and grandkids had any interest in foraging. I got all three generations covered in time. That's gonna help.
