I make honey cakes for hiking, camping and wife's long runs. Tastes good and full of energy. I tweaked Pipemaker from Hoods Woods forum's recipe. He called it Lembas honey bread. (My changes are in parenthesis because wifee prefers less gluten and if it's good enough for the Tarahumara...) They keep for a while too.

2 cups of wheat flour (1 1/2 cup corn flour and 1/2 cup chia seeds)
    1 cup corn meal
    2 cups of honey, warmed

Stir / mix into a batter
I always use muffin tins...filled half way
Bake at 350 degrees for 15-20 minutes.
    Cool.
    Eat.
