I figured by now, someone would have started a thread about what we've had to eat today, but I haven't found one, so here I go. For us, a cup of homemade Keurig machine Tim Horton coffee (or 2, just to get it right) to start the day. Then, about noon, pancakes and bacon. I thawed a nice ribeye steak and seasoned it and let it sit most of the day. My tiny ham was already thawed. I fired up the Akorn kamado cooker and did the steak, ham and zucchini and yellow squash 2 ways. Add in some cornbread dressing, some whole berry cranberry sauce, some sweet 'taters and we had a feast. I'm taking a break right now before diving into my fresh lemon meringue pie. Soooooooo, how bout the rest of ya'll?? Kajun PS Just had a little piece of the lemon meringue pie. WOW! Turned out great.......My Mom's recipe.
ganado, Chistmas chili sounds great, especially with cornbread and home made tortillas. We had our usual Christmas Eve chicken/sausage/okra gumbo last night with cornbread and rice. Usual coffee, Hanzo? Which "usual" was it today? LOL We did pancakes today, also. Not usual for us, but I just ran across a really good pancake recipe. Merry Christmas and Happy Eating to all. Kajun
Friends are making sure that I am not alone on the holidays. Excellent beef brisket sandwiches with the usual sides for lunch at one friend's place for lunch, Pork roast with the usual fixings for dinner with another set of friends. Plinking in the desert with one group Thursday, going to the range with another set of friends tomorrow..
Fixed a standing rib roast, crab cakes, grilled asparagus, a broccoli coleslaw, mashed potatoes, and fresh squeezed lemonade.
We have a "Tradition" here in the Inlet... Christmas Eve is Pizza at Wayne's... Venison & Canadian Bacon with Pineapple.... Then Christmas Day, this year we all went to Mariene's for a Traditional Holiday Turkey, with ALL the Trimmings.... Just got back, and I am STUFFED...
Ours was a pot luck. Hosts did the basics which I helped with. baked turkey, baked ham, fresh green beans and red potatoes, butter beans, loaded mashed potatoes, turkey gravy, dinner rolls, applesauce/fresh apple chunks cake with caramel frosting, snickers icecream, jalapeno poppers, spinach artichoke dip, scoopers, homemade cookies ... thumbprint sugar and peanut butter, dressing, a couple of cold salads, samples of my pastrami, Canadian bacon, and pepperoni. That's all I can remember, and I stretched by belly almost to the bursting point. We had 14 people big and little eating, It was great.
We had grand plans for Xmas dinner, however I've been under the weather for a while now and didn't really feel up to making much. The Mr smoked a ham from the store (we have a whole pig in the freezer but am going to try my hand at curing those hams so they're off limits for now) and I made some mashed potatoes. Also made him some salted caramel cookies, but that's about as far as it got. Spent the day on the couch playing Fallout 4, which gives me motion sickness so wasn't much in the mood to eat, heh.
No, not really. She has always been my most troublesome child. I love her dearly, but we seldom see things eye to eye. She once told me not to vote, unless I would vote FOR obummer. I told her to go to hell, and NEVER try to interfere with someone's right to vote, again! She is growing up, but still has some waking up to do.
Christmas eve is finger food and munchies, dips etc. Christmas dinner was rib roast, baked potato's, green bean casserole, salad, rolls, toped with pumpkin or apple pie.
Dinner at my cousin's place, turkey with all the fixin's, two varieties of spuds, beans with onions, croissants slathered in butter, cookies of all sorts, pumpkin pie with ice cream and more varieties of wine than could be imagined except a heavy red that would not fit well with the bird. I'm a pig, it turns out (but don't plan on making bacon of me) ate enough for a football pro. Made for a drowsy trip home, three hours on the rainy foggy road plus a couple wake up stops with coffee. Pretty much a good group to hang with on a holiday. Some of the younger folks thought they could get away with their various "devices" in use. Cuz put that down instantly, almost passed a basket around to collect all cell phones and the like. The upper two generations present applauded that announcement, the only ringy-dingy interruptions were timers going off. 14 in all ate well.
