Intro: A post in a different SM sub forum (Motivational Posters) about 'Miracle Rice' prompted me to investigate further. Motivational Poster Thread (warning content) and yes it is a real 'thing', but not quite the kind of 'rice', most would be thinking of.

Miracle Rice is not made of rice grains, but is made of a combination of different plant products, but manufactured to resemble rice in appearance in its uncooked form, and it has a similar texture and consistency to rice when cooked.

Shirataki Rice is low in carbs, so it should be suitable for diabetics, and those on low carb / low calorie diets. It is high in fibre, so, unless one has particular digestive issues with high fibre foods, then this rice should help keep the GIT moving along for those who tend towards constipation.

Shiritaki / Konjac noodles are also an alternative to rice noodles.

Looks and sounds better than cauliflower rice.. I'm going to look for these products.

Thanks for posting this Chell. Mrs. Dawg is diabetic and we both like our rice so this is at the top of the try it out list.

This miracle rice sounds interesting. I haven't tried it before, but I have used shirataki noodles. Today I decided to start the process of cutting out sugar, IF, and trying to live a healthier lifestyle. I'll look into this more. Thank you!

The relatively low glycemic index will help non-diabetics stay that way, but it still is 34 grams of carbs/serving. Definitely not keto territory. As a diabetic the GI (over 50) combined with the carbs would make this an occasional treat. Strangely I can eat dates all day long with no rise in blood sugar - I use a Libra sensor and get real time blood sugar readings along with history.

For healthy folks this would be great!
