Old Year Out, New Year In

    Wow, what a finish to 2021 and a start to 2022. Sweetie and our son came down with Covid, tested positive on Thursday. I wasn't feeling too bad, and tested negative. Sweetie went down to keep our son company and to quarantine me. She'll be back around 1/9 or so. They are both feeling much better (thank you, IM!) and I'm doing ok.....a bit weak, low O2 (COPD will do that, ya know) but fired up the O2 machine so O2 sats staying around 95-97. Sweetie and son's sats around96 w/o O2.

    Looked out a few hours ago and we were getting a light sprinkling of snow......not a totally bad way to start the new year. I went to prepare my usual southern new year's day meal and didn't have any black eye peas or cabbage, so substituted mixed collard/mustard greens and field peas. Got some good Cajun style pork sausage simmering, a pan of cornbread ready for the oven and some rice cooked up. Yummy! My appetite isn't very active, but I'll manage to choke down a bit of all of it.

    Keep on keeping on TX I'd rather lock horns with a tornado than eat collard greens,
    But you never know, Those greens may just put a huge dent in the Wuhan bug?

    2021 ended and 2022 will begin with Alabama football...ROLL! TIDE! ROLL!...which is good! I'm gonna have to buy another National Championship hat, t-shirt, sweatshirt, etc.! This will make #19!

    We went with fresh turnip greens, fresh black eyed peas, ham, mashed taters and corn bread.
    It will be another great year!

    I cooked up a small rib roast New Years Eve and had some. It was a tad tough, so I put it away until today. Got it out and just stuck it in the Instant Pot. Gonna get nice and tender and will go great with the left over field peas, greens and rice. :)

    All of us are feeling better. Yaay! The snow is still hanging on in the shadows. Whew, what a start to a new year!

    Took the left over Prime Rib and sliced and diced it up , tossed it in the crock pot with some red wine, sliced carrot, celery, onions, a big ol' green pepper, a hand full of Italian pickled peppers and let is stew for 5 hours in a beef bone broth with some of the renderings! Had the most awesome Italian Grinders with the Au-ju from the pot, heaven I tell ya! It's pretty rare around here to do a prime rib roast, so this was extra special! Hopefully it's a sign of good things to come this year!

    We did Prime Rib for Christmas, after all this is Texas and beef country.

    Up here, it's usually Elk or Venison, depending on the results of the seasons hunting, we got lucky, brothers both nailed their Elk, and Deer, and And I got my Elk season starting this weekend, so we should be covered if I get mine! We try and only buy a side of beef every year, but the last few years, we have bought the whole cow and had it partially butchered, preferring to do the rest ourselves the way we like them! Outside of that, the states ruined our salmon and steelhead fishing so we gotta poach if we want good fresh fish, or we go out in the salt and catch them there, the state has that monopoly too!
