Differing woods make different nitrate, most low pitch woods will have a cleaner smoke. How you work the meat is also important, i hate adding salt to any thing, prefering to let the natural flavors shine through! Veggies and beans can also be smoked BTW! Love me some smoked pinto beans, or butter beans! Even black beans and black eyed peas! Yummy, especially with Cheesy texas toast or sweet honey corn bread!
