New Drool Inducing Thread As Requested Last years thread here... Scottish/Canadian Christmas Cooking starts now! for those that havent seen and wish to slobber all over their computer screen.... While most of the cooking wont start for a couple days yet, I am currently making dried cranberrys to use in a few of the recipies to come. Cut cranberries in half (im using frozen ones as I have some needing used up but you can use fresh to) and toss with some avocado oil (2 Tablespoons for aprox 12oz bag) and sweetner to taste. As Im cooking mostly Keto, I used powdered ethritol (about 1/6 cup as I dont need them to be really sweet as there to be used mixed in other recipes) but powdered sugar will work for anyone not avoiding sugar. Use more sugar if your wanting cranberrys that you can eat, as is. (Probably up to 1/2 cup) Put on parchment paper in cookie sheet, in fan assisted oven at around 90 degrees (F) for 20-24 hours (or you can put up as high as 180-200 degrees but it will dry much faster so you will need to watch it. ) You can also use a dehumidifyer if you have one. Once dried to what you want. Put in a tightly sealed jar to store Ive also got my vanilla going. 20g of fine ground vanilla pods in about 50cl of a good quality rum Needs to marinate for a couple weeks minimum.
You are such a creative cook. Never heard of someone using rum to make vanilla. It would certainly add more flavor then using vodka.
Ho ho ho, tis the seaon .... oops, meant, Yo ho ho and a bottle of rum! Rum aught to make a most interesting Rum Vanilla! Next time I make my homemade Kaluha I will use Rum vs Vodka.

2 days before christmas... Turkey was delivered friday and is currently chilling out in the cooler. Anyone in the Uk wanting turkey (next christmas, pretty sure your sol if you havent got yours by now) Barra bronzes is my new fav turkey dealer. Also sent me about 2 kg of turkey livers ! (I emailed them asking about getting livers for pate) Gravy “base” is almost done.... a few changes from last year. I added a small (organic) orange and some juniper berrys. Carrot cake is currently cooling, this year its rum soaked cherries and pecans Making cranberry & pecan biscotti, and mocha biscotti for one of dh’s christmas gifts. Still cooking but looking good so far.... And canolli Ice cream just went into the freezer

So a while back I tried a recipe for Chocolate Pumpkin Sex In A Pan Dessert Have decided to bastardize it for Christmas. Introducing the beginning steps of Hazelnut sex in a pie tin Layer 1 - hazelnut crust Just out of oven... Layer 2 hazelnut cream Now cooling/setting and I will finish tomorow.
Chocolate hazelnut hanky panky pie (what ive decided to call it for now...) Layer 3, rich chocolate pudding... Layer 4 whipped cream topping And finished with grated dark chocolate

One Barra Bronze turkey, covered in herbed butter (garlic, sage, rosemary, salt, pepper, butter) and in the oven. Came out beautifully.
