Recipe Cornbread au la Louisiana

Crawfish Cornbread
1 box Jiffy (do not make according to directions on box!!!)
3 eggs
1 stick of butter, melted
1 cup chopped green onion
1 cup chopped white or yellow onion
1 can rotel tomatoes, drained
2 handfuls grated cheese of choice (I like Colby Jack or Pepper Jack)
1 lb crawfish tails (I coarsely chop mine)
Mix all ingredients. Pour into a greased 9x13 pan. Bake at 350 for 40-50 minutes.

 

Cher oui sounds good --- jambalaya crawfish pie .......

I use Martha White self-rising cornmeal instead of Jiffy mix, the Jiffy mix gots some sugar in it and don't much care for dat.

Mudbugs can be hard for me to get hands on, on a regular basis. Might use Shrimp, chopped Ham, or crisp Bacon, or pulled Pork in place of the Mudbugs

 

You can buy the frozen crawfish tails at any grocery

 

Ever try it with Razor Clams, or Crab? Curious, I think im gonna give it a try, maybe forgo the harsher onions and add some yellow corn!
Love Cornbread meals, especially southern style, with just a hint of spice!

 

DO not buy Chinese imported crawfish, Taste like rubber!

My uncle came in from down under and we took him to Atchafalaya restaurant and we order a selection so they could all have a taste of the different dishes, uncle asked what were those fat little shrimp, LOL when I told him they were crayfish (crawfish) he said, "yabbies, you eat them ?". well once he tried them he was on board there were about 10 of us good times, good food, Shrimp etoufe Crawfish gumbo BOUDIN & fried CRAWFISH, BEIGNETS --- damn if I am not getting hungry, last time I had gumbo I made it and that's been too long.
