Food storage - some questions

I guess I will be doing a test with what I have as it went into the freezer around April when I first got the house. I just broke it down into gallon zip lock bags so it's not air tight but I bet it will easily last 2 years...but I am going to need the space this Spring/Summer so will probably put most of it in Mylar.

 

Flour?
Many Types, all are different as to their storage time.

My best test indicate that standard white flour that is vacuum packed is good for a minimum of 6 months.
The more food value, meaning higher over all content of Mother Natures product, of the flour the faster it degrades.

OTOH Whole Red Hard Winter Wheat, properly harvested and dried, packed in CO2 or O2 absorbents will last for decades if not centuries.

Yes, I was looking at some yesterday and will use their services in the near future. They seemed very reasonably priced however I didn't look at shipping.
