I loved Little House on the Prairie. They were always so happy and healthy and Pa was quite the man. I found some of their recipes that came from the book series. These are fun recipes that are easy with basic ingredients. Johnny Cakes 1 cup corn meal 1 teaspoon raw sugar 1 tbsp. salt ½ cup water 1 lb. of bacon Instructions: In a bowl, mix the corn meal with the salt and sugar. Add water and mix until you get a nice paste. Form the paste into patties and set aside. Fry bacon. Remove bacon and fry the cakes in the bacon grease until golden brown. Wrap the patties in brown paper and then again in brown wax paper. Parched Corn Supplies: Fresh Corn on the Cob 1 tbsp. Lard Frying Utensil Instructions: Using a canteen half, plate or small skillet, melt the lard. Cut the corn off the husk and place in the pan. Fry until the corn is soft, then eat. Any recipe that has you cook bacon just so you can fry something in the grease is AWESOME in my book! Assumption being you also nosh on the bacon! Yum.
