I was wondering if you had ever had spoth? Spoth is an old German casserole type dish. It's made from asparagus, onions and a variety of German sausages and cheeses. Very few spices, if any, save for a small amount of salt. The one thing to remember is to slow bake it for a number of hours and never to broil it. It used to be very popular, especially in New York up until the mid- twentieth century. It's always quicker to make if it is broiled, so quite a few restaurants started preparing it that way. The result was a decline in the popularity of the normally delicious entree. Today it's rarely ever fixed and most have actually forgotten about it. It's rather sad, because it's really very good and a bit of German heritage as well. It's pretty obvious why, though. It's another one of those cases where too many cooks broiled the spoth.
